Quinoa spinach bake – perfect breakfast

Couple of years ago I had completely changed my eating routine and made it my habit to have proper breakfast. Before that I could go on one banana or yoghurt till late afternoon. Now my day does not go right if I don’t indulge into at least 400 healthy morning calories. But the problem is when you are all busy-busy and need to do at least 1000 things before heading out to some very important mission where to find time to prepare good healthy breakfast meal? The solution is simple – make quinoa spinach bake the night before and keep it in the fridge for 3-4 days. The dish is gluten-free and will provide lots of energy for a great start of the day. And of course this quinoa spinach bake is full of essential vitamins and minerals such as Vitamins A, B-6, B-12, C, D, Iron, Magnesium and Calcium. Plus it’s super easy to make and looks very appetising too.

Quinoa spinach bake ingredients

1 cup dry quinoa
1 small onion
3 handfuls of spinach
3 large eggs
1/4 cup milk (change for soya milk for dairy free option)
1/4 tsp each of salt, black pepper, paprika, oregano, basil, dried parsley
2 tbsp olive oil

Preparation

Cook quinoa according to the package cooking instructions. I usually put 2 1/2 cups of water for 1 cup of quinoa and boil it for 10 min on medium heat. Then slice the onion and fry it untill golden with a bit of olive oil. Blanch the spinach. Cool everything and then mix together. In a small bowl, whisk slightly eggs, milk and all seasoning. Add eggs to the quinoa/spinach mixture. Spread the final mixture in the oiled baking dish and bake at 180°C for 30-35 min. Keep refrigerated and don’t eat all of it before breakfast!

This quinoa spinach bake will go great accompanied with some yoghurt or veggie juice or just on its own.  I am sure such kind of breakfast will make anyone feel full of energy and ready to concur any difficulties the day throws.
